Secret Ingredient Carrot Whip

Makes 2 serving(s)


1 (14 1/2 ounce) can sliced carrots
1/3 cup of the carrot liquid from the can of sliced carrots
1 packed tablespoon light brown sugar
1 teaspoon butter or margarine
1/8 teaspoon ground ginger (this is the secret ingredient!)


Can opener
Liquid measuring cup
Measuring spoons
Rubber or silicone spatula
Medium-size, microwave-safe bowl
Microwave-safe plastic wrap
2 small plates or coffee cups
2 spoons


  1. Open the can of carrots with a can opener.
  2. Pour part of the liquid from the can into a liquid measuring cup. Stop pouring the carrot liquid once it reaches the 1/3-cup line. Then, spill out the rest of the carrot liquid from the can into the sink. Be careful not to spill out any carrots!
  3. Plop the carrots and the carrot liquid into the container of a blender. From measuring spoons, tap into the container the brown sugar, butter or margarine, and ginger. Make sure the lid is on tight!
  4. Blend on low speed for 30 seconds, then on high speed for 30 seconds, or until the carrot concoction is silky smooth.
  5. With the help of a spatula, empty the contents of the blender into a medium-size, microwave-safe bowl.
  6. Loosely cover the bowl with microwave-safe plastic wrap, turning back one corner of the wrap to let out the extra steam.
  7. Microwave on high for 1 minute. Stir. Then, microwave on high for 1 more minute.
  8. Carefully, remove the bowl from the microwave with potholders. Be careful of the steam!
  9. The microwave-safe bowl can do double duty. It can be the serving bowl, too! It'll serve two people. From your own small plate or mug, enjoy a mouthful of this silky smooth Secret Ingredient Carrot Whip with a spoon!
