Popeye's Pizza Bagel

WHAT'S IN IT?

1 (10 ounce) package frozen, chopped spinach, thawed
2 (2.5 ounce) plain, onion or garlic bagels
1 cup shredded part-skim mozzarella cheese
4 pinches salt

STUFF YOU NEED

Small bowl
Cutting knife (if you need)
Cutting board (if you need)
Large microwave-safe plate
Potholders

HOW TO PUT IT TOGETHER

  1. With squeaky-clean hands, squeeze all the liquid from the spinach into the sink. Toss the squeezed-out spinach into a small bowl.
  2. Split the bagels in half so you have four halves with a hole in the middle. Many bagels are already pre-sliced, so you probably won't need a knife to do this. If you do need a knife, carefully slice the bagels with a cutting knife on a cutting board.
  3. Place the split bagels, soft insides up, on a large microwave-safe plate.
  4. With your super-clean hands, spread the spinach out among the bagel halves--covering up the hole, too! You'll use about 2 tablespoons of spinach per bagel half.
  5. Take a pinch of salt and sprinkle it evenly over one spinach-covered bagel half. Repeat three times, until all bagels get a pinch of salt.
  6. Sprinkle the cheese over each of the spinach-topped bagels.
  7. Microwave the bagels on high for 1 1/2 to 2 minutes, or until the cheese just melts.
  8. Once the bagels are ready, use the potholders to remove the plate from the microwave, since the plate might be hot.
  9. Serve each straight from the microwave-safe plate! Just pick up your Popeye's Pizza Bagel once cool enough to handle. Now that's pizza with pizzazz!
