Very Cool Veggie Burrito

Makes 2 serving(s)

WHAT'S IN IT?

2 large (burrito-size) flour tortillas
2/3 cup fat-free, canned refried beans
1 cup shredded part-skim mozzarella cheese
1 medium, ripe tomato
2 green onions (use the white and green parts!)
1 1/2 cups pre-bagged chopped romaine lettuce
1/2 cup salsa for dipping (if you like)

STUFF YOU NEED

Measuring cups
Butter knife
Microwave-safe plate
Cutting board
Cutting knife
Plastic wrap or foil
Small, sealed container for salsa (optional)

HOW TO PUT IT TOGETHER

  1. Over the entire surface of each tortilla, spread 1/3 cup of the refried beans with a butter knife—just like frosting!
  2. Place each "frosted" tortilla on a microwave-safe plate. Microwave them, one at a time, on high for 30 seconds.
  3. Sprinkle 1/2 cup of the cheese onto each tortilla.
  4. Sit the tomato and green onions on the cutting board. Chop them up with a cutting knife until smaller than the size of dice. Scatter half of the chopped tomatoes and green onions onto each tortilla.
  5. Layer 3/4 cup of the lettuce onto each.
  6. Fold in 1 inch on both sides of each filled tortilla. Then, roll up each into a tight roll, beginning from the end closest to you.
  7. Finally, wrap each tightly in plastic wrap or foil so it's ready to toss in your lunch bag.
  8. If you like, measure 1/4 cup of salsa into each of two small, sealed containers. When it's time to eat, dip your burrito in salsa—or just take a bite! It's an awesome meal all wrapped up in one!
